Fly-by weekends.

Why do the weekends have to fly by? I love when I have the weekend off!

Friday I came home from work and cooked my little heart out. I posted the recipes that I made. I made Cheesy Bratwurst Casserole and then Ajvar. If you haven’t checked them out yet, I would! They are so delicious!!

Yesterday I went to a friends house and we grilled out. I also brought the Ajvar I made for them to try. It was a hit! Everyone enjoyed it!

For lunch/dinner we had bacon wrapped turkey, corn on the cob from the grill, asparagus from the grill, and fruit. It was so dang good!

I absolutely love this time of year! Grilling and sitting outside enjoying the sunshine and good weather! So fun!!! After we got done eating, we decided to play games. We played Yahtzee, Rummikub (I had such sucky luck! It was terrible!), and Scrabble (I actually won a game!). It was a fun night all around!

This morning has been a slow one, which I love. I woke up and sat with my pups for awhile, until I decided I wanted to make breakfast. I was a nice little cook and made to order breakfasts for my mom, dad, and Connie. My dad had scrambled eggs with onions and ham, Connie had scrambled eggs with ham and cheese, and my mom had an over easy egg with ham. Finally it was my turn to eat! So I made egg whites with spinach, ham, and a little bit of mozzarella cheese, cantaloupe, and then 2.5 oz of a red potato and made hash browns with a tbsp of coconut oil, garlic, and onions! Oh boy was it delicious! The best part… It was all only 7p+! Whoohoo! Score!

The rest of the day is still up in the air for me… I know we’re grilling chicken I have in the fridge that needs to be used up, but I still have to find a side dish or something to have as well. I also think I’m gonna mow the lawn as well… Plus we got tons of flowers to plant!

Ajvar.

Ajvar

  • Servings: 12
  • Difficulty: easy

Ajvar can be used as a spread, dip, or condiment. You can also put it over meat and pasta as a sauce!

INGREDIENTS:

  • 5 large red bell peppers
  • 1 medium eggplant
  • 5 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1/4 tsp sea salt, more to taste

DIRECTIONS:

  1. Wash and cut stems, clean insides of seeds and cut Red peppers in half. Cut eggplant in half lengthwise. (I also poked holes in the skin of eggplant).
  2. Place red peppers and eggplant face down on pan, and place in oven on Broil (about 30 minutes).
  3. Red peppers will be done when skins are black and insides are tender. Eggplant will be done when inside is tender.
  4. When red peppers are done, place them in a big bowl and cover with plastic wrap. Set aside and let steam/cool. While peppers are steaming, place eggplants on a plate and scoop out insides (make sure there are no large seeds) and put in food processor. Discard skin.
  5. Once eggplant is in food processor, put in garlic, and process until smooth.
  6. When peppers are cool to touch, peel off blackened skin. Add them into the food processor.
  7. While pulsing, slowly drizzle in olive oil, and sea salt. Pulse or process until you get to a consistency you like.
  8. Put in jar and eat right away or refrigerate.

Cheesy Bratwurst Casserole.

Cheesy Bratwurst Casserole

INGREDIENTS:

  • 5 Bratwurst
  • 4 medium sized potatoes, cooked and diced
  • 16 oz green beans, frozen, thawed and drained
  • 3/4 cup mozzarella cheese
  • 1/3 cup chopped onion
  • 1 can of cream of mushroom soup

DIRECTIONS:

  1. Preheat oven to 350 degrees.
  2. In a 9×13 pan, place potatoes, bratwurst, onions, soup, and cheese, and stir together.
  3. Bake, covered, for 45 minutes or until heated through.

  • ½ cup peaches, frozen
  • ½ cup strawberries, frozen
  • 1 kiwi, diced
  • 3 Tbsp apple juice
  • 1 container of Greek yogurt (I used Yoplait Vanilla Greek 100)

DIRECTIONS:

  1. Add liquids and yogurt first. (Unless you have a bullet type blender like me, then put it in last!) You want the liquid to be closest to the blade…
  2. Add in fruit.
  3. Enjoy!

INGREDIENTS:

  • ½ cup apple juice
  • ½ cup vanilla Greek yogurt (I used Yoplait Greek 100 and it came out to be pretty much the whole container)
  • ½ cup frozen pineapple, diced
  • ½ cup frozen mango
  • 1 banana, chopped
  •  1 tsp grated ginger

DIRECTIONS:

  1. Add liquids and yogurt first. (Unless you have a bullet type blender like me, then put it in last!) You want the liquid to be closest to the blade…
  2. Add in fruit.

Oh the exhaustion.

Finally! I get to write on here! Man, is it possible for a week to go by slow, yet fast at the same time? I meant to come on here on Friday after my bout of the stomach issue, but I got asked to come into work, so writing took a back burner. I was then going to write last night, but since I had to sleep at work this weekend, sleeping took a higher priority so it again, got shoved to the back burner.

Now, I have to remember all that I was going to talk about…

So this week was my official “lets get back on track on Weight Watchers”. I have been extremely proud with how it started out! I tracked everything and made great choices… up until I got sick! Luckily, I have still made decent choices, but I haven’t been the best at tracking. It didn’t really help working this weekend, I wasn’t home and didn’t have “my food” there. I’m not worried about anything though, because like I said, I am happy with the choices I made.

Along with all that, I walked and got more steps than normal as well too! The day before I got sick, I walked over 20,000 steps (a brand new record for me!! I even got a cool new fitbit badge added to my collection!) Along with the steps, I also did 50 flights of stairs through-out the day! I’m also pumped about that because along with the new steps badge I also got a new flights of stairs badge! It was a very good day!! Ever since then though, I’ve been taking it easy. Didn’t wanna push myself too hard, and then get sick again. Tomorrow starts a brand new week so I will be back at walking! My goal this week is reaching at least 8,000 steps each day. I figure that is a definite step up from the 5,000 I had before, and also a nice starting point after even making 6,000 the last three days.

Hmm… I think that’s all I have for now. 🙂
