IV Bag with Coffee…STAT!

I can officially NOT stay up all night and get no sleep.

I finally fell asleep between 4:15-4:40 am this morning, and then had to get up at 7:45 am.

I desperately need coffee.

No sleep = not eating healthy what so ever. Boo… Breakfast included Bugles & Hummus (holy crap that combination together is AWESOME!) and waffles with syrup. See, not at ALL healthy.

So this week I’m on Staycation (thank GOD!). This is when we were going to take the road trip that sadly fell through. Honestly, I needed the time to just stay at home anyways, so I’m kinda glad that it never happened. I’ve gotten to spend time with my dogs and get some stuff done around the house.

This weekend is what I’m looking forward to most though! Heading to the cabin at the lake for a girls weekend! Whoohoo!!!

Before I leave and venture to the Kwik Trip by my house for a large $1 Iced Coffee, I’m going to post a playlist Spotify made for me! It’s insanely good! Very low key, easy listening music. So relaxing! Who doesn’t like relaxing music?!

HUMP DAY!

It is 4:00am…

Why am I STILL up? Yes that’s right… I have not gone to bed yet. Am I tired though sadly?

Nope.

I just finished watching two movies that Sarah rented (so that’s partly why I’m still up).

The first one I watched was The Maze Runner. I actually really enjoyed that one. I’ve been wanting to rent it for a while now, but figured if it was “free” then I should TOTALLY watch it. Only real problem with that was that it has to be back on Wednesday. Well, I got it watched! HAH! I didn’t realize that there’s going to be The Maze Runner 2 coming out in September. Who’s excited? Yep me! Can’t wait to see the direction they go in that one!

The second movie I watched was Interstellar. Well… that movie was… interestingly weird. I really can’t think of any other words to describe it… I definitely thought it was a movie that made you think. Honestly most of the time I felt and thought,

“Man, I feel like I’m in a Charlie Brown cartoon…”

Anyways… It was fairly good. It definitely had some action moments and a ton of moments that got intense. I did end up getting a little teary at the end as well… but I’m gonna just say that I had dirt in my eye or something. 😛

What else do I have to say…

Not a whole lot apparently…

Maybe I will think of some more later…

My days have been so mixed up and it’s only going to get worse! Starting at 2am on Monday morning, my vacation until the 30th starts!

So today went by extremely fast… I didn’t wake up until 9am. There was a pretty bad storm last night, which ended up waking me up. It was like a strobe light going off outside and then the thunder was so incredibly loud! But I ended up falling back asleep so it was fine.

I then went to the Farmer’s Market and sat and chatted with my mom and godmother. I also went around and got some stuff; kohlrabi, a mini apple pie (I couldn’t resist), and then I bought some of my mom’s cookies. Do I need them? NO! But seriously… my mom makes thee best cookies. Like no, seriously, she does. I got Andes Mint Chip cookies and then Brownie Cookies. MMMMMMM

I decided earlier that I wanted to have Papa Murphy’s Pizza for dinner tonight, so I left a little early and went and picked it up on my way out of town. Half way to work I got a text saying, “Power’s out.”

I don’t know about you, but I came to realize today that I can’t live without electricity and my electronic devices. I mean, I know I’m being dramatic, because I can in fact live without them… it’s just hard! Luckily, after I decided to cook my pizza on the grill outside (no sooner did it finish and I turned off the gas), the power turned back on!

Yay the world was once right again!

So I worked, watched a couple movies, and now am at home and going to bed. My life is so exciting 🙂

Mouse in the House!

My Thursday started out pretty normal… I didn’t have to work until 6pm so I got to lounge around the house all day! Yippie! Love days like that, I mean, who doesn’t?!

During Good Morning America, I decided to make myself some breakfast. Oh BOY was that a fabulous breakfast!!!

Lately, I’ve been having these crazy breakfast wants… like this morning I sautéed some kohlrabi, onions, and mushrooms. Then I saw a beef frank in the fridge and decided, HEY lets fry that baby up too! So I threw that in. I scrambled up 2 eggs and TADA! Breakfast! It was glorious!

After breakfast, I continued to sit on my behind. It was cloudy and we were finally able to open the windows, so the breeze was blowing in. It was awesome.

Fast forward to this afternoon…

So for the past couple of days I have been obsessed with Zucchini noodles. They. are. out. of. this. world! I seriously can’t stop eating them! So for lunch I remember that I had bought a big case of diced tomatoes at Sam’s Club that have been sitting in my garage, waiting patiently for someone to use them. Long story short… made Zucchini noodles with homemade marinara sauce. Again, DELICIOUS!

I didn’t just stop there, oh no! After I ate, I made even MORE to take with me for work tonight! This time I added 1/3 cup shredded hamburger that I had cooked last night. Seriously, I don’t see myself getting sick of anything of this for a while… I mean, my godmother grows zucchini and by grows I mean GROWS them. She sells them at farmers market every week and she fills her trunk up at least 2 times… there’s THAT MANY!

Anyway, here’s what my dinner looked like…

This now finally brings me to what all went down at work… So right now my bosses family is visiting. There’s a total of 8 kids there. Yes, 8 kids. Holy cow the place is full to the brim! I luckily am used to that many kids, since I was a toddler teacher’s assistant for 3 years back in the day… anyway, since they had been camping, I was told they would be “tired”. HAH! lies!… (Oh I thankfully had their grandma there with me as an extra set of hands so that was nice as well!) They earned a “slumber party movie night” so we turned on movies for them to watch. First came Mulan (love it!) and then came The Little Mermaid (fav movie as a kid!!!!). When 10:00pm rolled around and only 3 out of the 8 were sleeping, we said enough was enough and turned off the movies and turned on music. Finally around 10:30pm the munchkins fell asleep.

That’s when shit hit the fan.

I was originally only supposed to work until 10pm. I stayed longer because I didn’t want to leave their grandma all by herself with the baby and the other crazy crying man and all the other little sleeping munchkins. Good thing I did because crazy crying man woke up 5 times screaming… and the baby woke up 3 times.

After hiking up and down the stairs (because you think they would freak out at the same  time?! NOOOOOOOOOOOO…..) I came over to my computer and started to catch up on some blogs.

I heard a nose at the door and saw that their cat, Jane, wanted to come back in. So I let her in. I just happened to look at her off in the distance, when I happened to see something scurrying away.

holy shit did you see that?!

was my response.

i think jane just brought in a live mouse.

was my next response.

Sure as the air we breathe it was in fact a damn mouse.

was all I could really say.

We spent 45 min trying to get that damn mouse out of the house. It finally climbed behind a big cabinet thing and ended up falling into the vent. We had no idea what to do, so we took those heavy building blocks kids play with, and put them over the vents that we could find.

Thank God I don’t have to sleep there tonight… because frankly, there would be no sleeping. Thank God my bosses weren’t pissed with me either! I was feeling so bad that it all happened, but this isn’t the first time Jane has brought something in. At their old house, she brought in a bat and a squirrel.

Seriously…

It’s off to bed now for me… it’s 2am and I am quite exhausted after tonights activities.

Zucchini Noodles and Marinara.

Zucchini Noodles and Marinara

INGREDIENTS:

  • 1 large zucchini
  • 1 can of diced tomatoes (or if you have tomatoes in season that are fresh, you can dice it yourself)
  • 1 tsp olive oil
  • 1 tsp fresh rosemary
  • 1 tsp Italian seasoning (onion, garlic, oregano – if you want fresh ingredients)
  • dash of salt

DIRECTIONS:

  1. Wash zucchini. Once it’s washed, cut off both ends and toss.
  2. Depending on how you want your noodles to look, you can use
  3. Start peeling on one side. Peel until you get far enough to the middle where you see seeds. Once you see the seeds, move to the opposite side. Continue until you can see seeds all the way around. (once I have it all peeled, I use the middle in stir fry’s.)
  4. After it’s peeled, put all noodles into a strainer and set in sink. Sprinkle a little bit of salt on the noodles. Let the noodles “sweat” in the strainer for 25 minutes or so.
  5. While your noodles are sweating, place diced tomatoes in a large bowl. Then, add in your chopped rosemary and Italian seasonings. Stir and set aside.
  6. Get a pan on the stove hot with 1 tsp of olive oil. While the pan is heating, paper towel dry zucchini noodles with paper towel to remove excess water.
  7. Place noodles in pan and let them sauté. After about 5-7 minutes, turn burner on Low and stir in your Marinara sauce. Let it simmer for about 15-20 minutes on Low, stirring occasionally.
  8. Enjoy your delicious meal you just created! 😀
